Ingredients

Black Beans
2 Cups (280g)
Baking Paper
1 sheet

Seasonings

Water (Ingredient A)
5 1/2 Cups
Sugar (Ingredient A)

Soy Sauce (Ingredient A)
2 Tbsp
Salt (Ingredient A)
1 Tsp
Baking Soda (Ingredient A)
1/3 Tsp
Sugar

Steps

Combine the beans with all ingredients of A in a deep, heat-resistant container and let sit covered overnight.

 

 <Important Point>
Use a deep, heat-resistant container (2.5L or more) in order to prevent the meal from boiling over.

Put water in the water tank.

Make a drop lid out of baking paper that matches the size of the dish, and then cover with a heat-resistant lid or make one out of aluminum foil.

Line up the contents of step 3 on the Baking tray.

Select MANUAL COOK, WATER OVEN 2 then press ENTER.

Choose 1 TRAY, NO PREHEAT, press ENTER.

Choose 220℃ and press ENTER.

Choose ABOUT 1 HOUR and press START.

As soon as the dish is done, press STOP/CLEAR to move on to the next step.

Select MANUAL COOK, WATER OVEN 2 then press ENTER.

Choose 1 TRAY, NO PREHEAT, press ENTER.

Choose 140℃ and press ENTER.

Choose ABOUT 1 HOUR and press START.

Take the dish out of the oven when done, add in the sugar, and stir.
Immediately cover the dish again with the drop lid and heat-resistant lid, and place the dish on the Baking tray.
Repeat the cooking directions in step 5.

Select MANUAL COOK, WATER OVEN 2 then press ENTER.

Choose 1 TRAY, NO PREHEAT, press ENTER.

Choose 140℃ and press ENTER.

Choose ABOUT 1 HOUR and press START.

If there are still beans floating on the surface (step 6), take some juice and put the beans in it.
Let them sit for an evening to allow the flavor to sink in.
